Honey Cake

Directions

Melt honey, sugar, and butter in a nonstick pot over low heat. Once melted, add baking soda and mix for 2-3 minutes before letting it cool. Transfer the mixture to a large bowl, add salt, eggs, and whisk thoroughly. Mix in flour until smooth. Pour half the batter into a baking tray and bake at 180°C for 7-8 minutes. Divide each layer into quarters and crush scraps with a rolling pin. In a bowl, whisk Greek yogurt with sugar-free dulce de leche to make frosting. Spread frosting between layers, dust with breadcrumbs, and refrigerate overnight or for at least 4 hours before serving.
